I would uncheck the single player settings box; it boosts your tames health & melee, and makes things too easy, IMHO. I would lightly boost taming & harvesting (say 3x, equal to event on official), massively boost the settings related to breeding, and maybe, just maybe, boost your player & tame dino weight stats a tad, say 1.25 or 1.5, to make resource runs less grindy.
